Caramelized sugars vs. caramelized color

Caramelized sugar is a light to dark brown liquid or powder which is obtained from controlled heating of carbohydrates and which is used primarily for flavoring and/or coloring. After its process the starting raw materials (sugars) have almost completely (>90%) reacted into high-molecular-weight compounds like polysaccharides. The energy value of caramelized sugars depends on the process and raw materials and will be significantly lower than sugar (4 kcal per gram). Caramelized sugar is a natural, clean label ingredient.

Caramel color is prepared by the controlled heat treatment of carbohydrates. To catalyze caramelization, and for creating stability in different environments, additives such as acids, alkalis, ammonium compounds or sulphites are used.
